RESUMO: O metil jasmonato (MeJA) é reconhecido como um hormônio vegetal que induz várias alterações bioquímicas relacionadas à qualidade dos frutos, mas é evidente que o efeito do MeJA durante a pós-colheita é muito variável quanto à concentração, espécies de plantas e até mesmo cultivares. O objetivo deste trabalho foi relacionar a aplicação deste regulador em baixa concentração (10 µmol L-1 por 24 h) às mudanças na fisiologia pós-colheita, na incidência de antracnose e na qualidade do mamão ‘Golden’ durante o armazenamento a 24 ± 1 ° C. A partir do sétimo dia de armazenamento, a incidência de antracnose foi reduzida em mais de 50% com o tratamento com MeJA. Incidência da doença também foi reduzida. Embora o MeJA tenha reduzido a acidez dos frutos, os teores de ácido ascórbico e sólidos solúveis não foram alterados durante o armazenamento com o tratamento hormonal. A cor da casca e a firmeza da polpa apresentaram ligeira retenção. A redução na produção de etileno foi acompanhada pela redução da respiração nos frutos tratados. MeJa aumentou a atividade da CAT apenas na casca, enquanto a atividade da SOD não foi induzida por MeJA na casca e na polpa. Embora o aumento da CAT a partir do terceiro dia de armazenamento possa ter contribuído para a redução da peroxidação lipídica na casca, a redução do MDA na polpa não pode ser explicada apenas pela atividade da CAT. Em resumo, a aplicação de MeJA em mamão ‘Golden’ reduziu a incidência e severidade da antracnose, diminuiu a respiração, a produção de etileno e a peroxidação lipídica. Conclui-se que a aplicação de MeJA em baixa concentração (10 µmol L-1) pode contribuir para o controle da antracnose em mamão ´Golden` e retardar o amadurecimento dos frutos.

ABSTRACT: Methyl jasmonate (MeJA) is recognized as a plant hormone that induces several biochemical changes related to improving fruit quality, but it is evident that the effect of MeJA during postharvest is very variable upon concentration, plant species, and even cultivars. The objective of this research was to relate the application of this regulator at low concentration (10 µmol L-1 for 24 h) to changes in postharvest physiology, on the incidence of anthracnose and quality of ‘Golden’ papaya fruit during storage at 24 ± 1°C. From the seventh day of storage, anthracnose incidence was reduced by more than 50% with MeJA treatment. The lesion area after infection was also reduced. Although, MeJA reduced fruit acidity, the ascorbic acid and soluble solids content were not altered during storage with the hormonal treatment. The skin color and pulp firmness showed slight retention. The reduction in ethylene production was accompanied by a reduction of respiration in treated fruits. MeJa increased CAT activity only in the skin whereas SOD activity was not induced by MeJA in both skin and pulp. Although, the increase of CAT from the third day of storage may have contributed to the reduction of lipid peroxidation in the skin, the MDA reduction in the pulp cannot be explained only by CAT activity. In summary, the application of MeJA in ‘Golden’ papaya reduced the incidence and severity of anthracnose, decreased respiration, ethylene production and lipid peroxidation. It is concluded that the application of MeJA at a low concentration (10 µmol L-1) may contribute to anthracnose control in ´Golden`papaya and slows the ripening of fruits.

ABSTRACT The aim of this study was to test the hypothesis that lemongrass and thyme essential oils (EOs) reduce Botrytis cinerea development and control gray mold in ‘Italia’ grapes. The fungitoxicity evaluation was performed by EOs direct contact with the pathogen, in culture medium, and by exposure to the EOs volatile phase. Individualized rachis berries were inoculated by subcuticular injection of a conidia suspension and after 4 hours sprayed with the EOs of lemongrass and thyme (100 to 1,000 mg·L-1), or oils blend (500 mg·L-1 thyme + 100 mg·L-1 lemongrass), and then stored at 25 °C / 75% relative humidity. To verify the possibility that the EOs protect the fruit against B. cinerea, the berries were sprayed with 400 mg·L-1 of each EOs or with the blend (200 mg·L-1 thyme + 200 mg·L-1 lemongrass), and after 24 hours inoculated with B. cinerea. On clusters, thyme (800 mg·L-1) and the blend (500 mg·L-1 thyme + 100 mg·L-1 lemongrass) were sprayed 4 hours after inoculation and then stored at 25 and 1 °C. The disease incidence and severity were analyzed, as well as the fruit quality attributes. EOs had antimicrobial effect, in-vitro, incorporated into the culture medium or by volatilization against B. cinerea. On detached berries, the thyme and oil blend reduced the gray mold severity when inoculated 4 hours before spraying. In clusters, thyme at 800 mg·L-1 significantly reduced the gray mold development only in fruits kept at 1 °C, without impairing the clusters quality, which could be an alternative for the disease management in postharvest.

ABSTRACT Nitric oxide application has been seen as a promising technique to extend the postharvest life of various fresh fruits and vegetables. This is the first work involving the spray application of nitric oxide donor S-nitrosoglutathione (GSNO) on Golden papaya. Considering that results are very distinct depending on the type of the nitric oxide donor, the form of application, the concentration used and the species studied, the application must be adapted to each necessity. The aim of this study was to relate the application of GSNO, spray applied at 10, 100, 1,000 ?M, with the physiological, physical-chemical, and biochemical changes of Golden papaya, in the first 72 h of ripening. Control fruit was sprayed with distilled water. GSNO application did not interfere on color and chlorophyll fluorescence of the peel, on soluble solids, titratable acidity, lipid peroxidation, and in the level of S-nitrosothiols. Control fruit and 10-?M GSNO sprayed showed lower respiration. After 72 h of ripening at 25°C, all fruits showed an increase in ethylene biosynthesis, except for those treated with 10 ?M GSNO. Papaya sprayed with 10-?M GSNO showed the highest pulp firmness and 52% less weight loss when compared to control fruit. GSNO was also responsible for increasing the ascorbic acid in papayas, besides showing an increase in total antioxidant activity production. The results indicated that the application of 10 ?M of GSNO by spray can potentially preserve the quality characteristics of Golden papaya, mainly due to the lower ethylene production, the delay in the firmness loss, and the less weight loss.

RESUMO: Apesar das técnicas de armazenamento refrigerado e atmosfera modificada já terem sido estudadas para carambolas processadas, pouco foi feito considerando a fruta inteira. Além disso, cada cultivar possui peculiaridades, dessa forma a eficiência dos tratamentos pós-colheita combinados deve ser estudada. O objetivo deste trabalho foi avaliar o efeito do cloreto de polivinila (PVC), 8,5 µm de espessura e polietileno de baixa densidade (PEBD), 33 µm de espessura associados ao armazenamento refrigerado (10 ± 1 °C e 5 ± 1 °C / 85 ± 5% de UR) na conservação da carambola Malasia. O armazenamento a 25 °C manteve a qualidade da carambola, independentemente do tipo de filme, até quatro dias. A perda de massa foi maior nos frutos embalados em PVC, mas esta não foi percebida pela análise sensorial. As temperaturas de armazenamento de 5 e 10 °C não causaram dano de frio, mas os frutos apresentaram retenção no desenvolvimento da coloração amarela e na redução da firmeza; esses aspectos foram avaliados positivamente na análise sensorial. O tipo de filme não influenciou a conservação do fruto. O armazenamento a 5 e 10 °C, independente do filme da embalagem, prolongou a vida útil da carambola ‘Malasia’ até 16 dias, seguido por dois dias a 25 °C.

ABSTRACT: Despite the fact that cold storage and modified atmosphere techniques have already been studied for fresh cut Star fruit, little has been done considering the whole fruit. Besides that, each cultivar has its peculiarities, so the efficiency of combined postharvest treatments should be studied. The objective of this study was to evaluate the effect of polyvinyl chloride (PVC), 8.5 µm thick and low-density polyethylene (LDPE), 33 µm thick associated with cold storage (10 ± 1 °C and 5 ± 1 °C / 85 ± 5% RH) on the conservation of ‘Malasia’ Star fruit. Storage at 25 oC maintained Star fruit overall quality, regardless of the film type, up to four days. The weight loss was higher in fruit packed with PVC, but this fact was not noticed by the sensory analysis. The storage in 5 and 10 oC did not caused chilling injury but fruit presented retention of yellow color development and firmness reduction; these aspects were positively assessed by the sensory analysis. The film type did not influence the conservation of the fruit. The storage at 5 and 10 °C, regardless of the package film, prolonged ‘Malasia’ star fruit shelf life up to 16 days, followed by two days at 25 °C.

RESUMO O metil jasmonato (MJ) é um regulador endógeno que pode influenciar o processo de amadurecimento de frutos e o sistema de defesa contra patógenos. O objetivo do trabalho foi verificar a influência desse regulador na fisiologia pós-colheita, no controle da antracnose e nas características físico-químicas de goiabas (Psidium guajava L.) ‘Kumagai’. As goiabas foram colhidas nos estádios verde e amarelo e tratadas com 0, 1 e 10 µmol∙L−1 de MJ por volatilização em tambores herméticos (200 L) com circulação de ar por 24 h. Os frutos foram inoculados com Colletotrichum gloeosporioides (105 conídios∙mL−1) 24 e 48 h após o tratamento. Durante o amadurecimento, a 25 °C e 80 – 90% de UR, foram realizadas análises de respiração, produção de etileno, incidência e severidade da antracnose e análises físicoquímicas. Os dados foram submetidos à análise de variância e as médias, comparadas pelo teste de Tukey (p ≤ 0,05 e 0,10). A aplicação de 1 e 10 µmol∙L−1 de MJ provocou discreto aumento na respiração, produção de etileno e amarelecimento da casca em frutos colhidos no estádio amarelo. O tratamento com 1 e 10 µmol∙L−1 de MJ não teve efeito na redução da severidade e na incidência de C. gloeosporioides quando aplicado em frutos nos 2 estádios de amadurecimento e inoculados após 24 ou 48 h do tratamento. Conclui-se que a aplicação de 1 e 10 µmol∙L−1 de MJ teve pouca influência no amadurecimento e não controlou a antracnose em goiabas ‘Kumagai’.

ABSTRACT Methyl jasmonate (MJ) is an endogenous regulator that can influence fruit ripening and the defense system against pathogens. This work verified the influence of this regulator on postharvest physiology, control of anthracnose and physicalchemical attributes of ‘Kumagai’ guava (Psidium guajava L.). Guavas harvested at mature-green and ripe stages were treated with 0, 1 and 10 μmol∙L−1 MJ as gas in hermetic containers (200 L) with air circulation for 24 h. Fruit were inoculated with Colletotrichum gloeosporioides spore suspension (105 spores∙mL−1) 24 and 48 h after treatment. During ripening, at 25 °C and 80 – 90% of relative humidity, respiration, ethylene production, anthracnose incidence, severity and quality of guavas were assayed. Data were subjected to analysis of variance and means, compared by Tukey’s test (p ≤ 0.05 and 0.10). The application of 1 and 10 μmol∙L−1 MJ had little influence on ripening of ‘Kumagai’ guava with a slight increase in respiration, ethylene production and yellowing of fruit harvested at ripe stage. Treatments with 1 and 10 μmol∙L−1 MJ did not reduce the severity and incidence of C. gloeosporioides when applied in fruit harvested at ripe and mature-green stages and inoculated 24 or 48 h after MJ treatment. In conclusion, the MJ treatment, at 1 and 10 μmol∙L−1 concentrations, had little influence on ripening and did not control anthracnose in ‘Kumagai’ guavas.

'Golden' papayas at maturity stage 1 (15% yellow skin) were chosen to study selected oxidative processes, the activity of antioxidant enzymes and lipid peroxidation in storage at 22°C, during the ripening of the fruit. An increase in ethylene production was observed on the second day of storage and it was followed by an increase in respiration. An increased activity of catalase, glutathione reductase and ascorbate peroxidase was observed concurrently or soon after this increase in ethylene production and respiration. The increased activity of these enzymes near the peaks of ethylene production and respiration is related to the production of oxidants accompanying the onset of ripening. On the fourth day of storage, there was an increased lipid peroxidation and decreased activities of catalase, glutathione reductase and superoxide dismutase. Lipid peroxidation induces the increase of antioxidant enzymes, which can be verified by further increases in the activities of catalase, glutathione reductase, superoxide dismutase and ascorbate peroxidase. Unlike the other antioxidant enzymes, the ascorbate peroxidase activity in the pulp increased continuously during ripening, suggesting its important role in combating reactive oxygen species during papaya ripening. With regard to physical-chemical characteristics, the soluble solids did not vary significantly, the acidity and ascorbic acid contents increased, and hue angle and firmness decreased during storage. The results revealed that there was variation in the activity of antioxidant enzymes, with peaks of lipid peroxidation during the ripening of 'Golden' papaya. These results provide a basis for future research, especially with regard to the relationships among the climacteric stage, the activation of antioxidant enzymes and the role of ascorbate peroxidase in papaya ripening.

Algumas espécies de citros apresentam produção irregular ao longo dos anos. Além da safra irregular, a alternância de produção pode interferir na qualidade dos frutos, característica cada vez mais valorizada pelo mercado citrícola. O objetivo do trabalho foi avaliar o efeito da carga pendente na qualidade dos frutos da laranjeira 'Valência'. O experimento foi conduzido com laranjeiras 'Valência' enxertadas em tangerineiras 'Cleópatra' em condição de campo. Em janeiro de 2007, metade das plantas teve todos os seus frutos retirados, enquanto a outra metade permaneceu intacta. As plantas que tiveram seus frutos retirados apresentaram, em setembro de 2007, floração mais intensa e, portanto, uma Alta Carga de frutos (AC, 752 frutos/árvore) em 2008, quando comparadas às plantas que não tiveram seus frutos retirados, que apresentaram Baixa Carga de frutos (BC, 317 frutos/árvore). Os frutos maduros, colhidos em dezembro de 2008, foram analisados quanto à massa, teor de sólidos solúveis, acidez titulável, espessura e cor da casca, teor de suco e número de sementes. Na safra seguinte, de 2009, as avaliações das características físicoquímicas dos frutos foram repetidas nas mesmas árvores, mas durante quatro momentos entre o período de frutificação e a colheita, em novembro de 2009. Na safra de 2008, houve diferença na massa individual dos frutos com valores de 172 e 158g nas plantas BC e AC, respectivamente. O teor de sólidos solúveis, acidez titulável, teor de suco nos frutos, espessura da casca e o índice tecnológico foram semelhantes entre os tratamentos, nas safras de 2008 e 2009. Entretanto, vale considerar que, como a produção de frutos nas plantas AC, na safra de 2008, foi 2,2 vezes maior se comparada às das plantas BC (AC: 2,9 caixas/planta e BC: 1,3 caixa/planta), a quantidade total de sólidos solúveis produzida por planta também foi maior. Não houve influência da carga pendente de frutos no teor de açúcares (glicose, frutose e sacarose) no suco e na cor da casca durante o desenvolvimento dos frutos. Apesar de reduzir a massa do fruto, a diferença de carga pendente observada em laranjeira 'Valência' não influenciou na qualidade dos frutos quando considerado, como destino da fruta, a indústria citrícola.

Some citrus species show irregular production over the years. Besides the irregular crop yield, alternate bearing may affect the fruit quality, a characteristic that is increasingly valued by the citrus market. The aim of the work was to evaluate the effect of crop load on fruit quality of 'Valência' orange trees. The experiment was carried out under field conditions with 'Valência' orange scions grafted on 'Cleópatra' mandarin rootstocks. In January 2007, half of the plants were defruited, while the other half remained intact. Plants that had their fruit removed showed in September 2007 more intense flowering, and therefore a high fruit load (HL, 752 fruits/tree) in 2008, compared to intact plants showed low fruit load (LL, 317 fruits/tree). The fruits harvested in December 2008 were analyzed considering weight, soluble solids, titratable acidity, peel thickness, juice percentage, number of seeds and peel color. In the next crop, in 2009, the evaluations of physical and chemical characteristics of fruits were carried out in the same trees but during four moments between fruit development and harvest in November 2009. Fruit harvest in 2008 had different individual weight with values of 172 and 158 g for LL and HL plants, respectively. The soluble solids, titratable acidity, percentage of juice, peel thickness and technological index was similar between treatments in 2008 and 2009. However as fruit production in HL plants was 2.2 times higher than in LL plants in 2008 (AC: 2,9 boxes/plant and BC: 1,3 boxes/plant), total soluble solids produced per plant was also higher. Crop load did not affect the sugar content (glucose, fructose and sucrose) in juice and skin color during fruit development. Although it reduced the fruit weight, the difference in crop load observed in 'Valencia' orange had no influence on fruit quality when considered the citrus industry as fruit destination.

O 1-metilciclopropeno (1-MCP) tem sido usado para estender a vida pós-colheita de várias espécies. Geralmente, a eficiência do 1-MCP diminui quando aplicado em frutos em estádio de maturação avançado. O objetivo deste trabalho foi verificar a influência do estádio de maturação em alguns atributos físicos e químicos do mamão 'Golden' tratado com 1-MCP. Os mamões foram colhidos em cinco estádios de amadurecimento e tratados com 100 nL L-1 de 1-MCP durante 12 horas a 23 ºC. Os frutos foram diariamente avaliados quanto à cor da casca e firmeza da polpa, enquanto os sólidos solúveis, a acidez titulável e ácido ascórbico analisados quando os frutos atingiram a firmeza de consumo (20 N). O 1-MCP retardou a perda de firmeza durante o amadurecimento dos frutos em todos os estádios de amadurecimento. O uso do 1-MCP prejudicou o amolecimento de frutos colhidos no estádio 0 (totalmente verde), os quais não atingiram a firmeza de consumo. Embora a aplicação do 1-MCP em estádios mais precoces tenha sido responsável por um incremento significativo no período de comercialização, os frutos tratados permaneceram na firmeza de consumo por poucos dias. Quando aplicado em estádio mais avançado, o 1-MCP não só aumentou o período de comercialização, como também prolongou o período em que os frutos permaneceram nas condições de consumo. A aplicação do 1-MCP retardou a mudança da coloração, mas com um efeito menor quando comparado à retenção da firmeza. O ácido ascórbico, acidez titulável e sólidos solúveis não foram influenciados pela aplicação do 1-MCP. A aplicação do 1-MCP em frutos colhidos em estádios mais avançados de maturação pode ser uma prática interessante uma vez que não impede o amadurecimento e ainda pode prolongar o tempo em que o fruto permanece na condição de consumo.

The 1-methylcyclopropene (1-MCP) has been used to extent postharvest life of various species. Generally, 1-MCP effectiveness decreases when applied in fruits at advanced ripening stages. The aim of this work was to verify the influence of ripening stages on some physical and chemical attributes of 'Golden' papaya treated with 1-MCP. Papayas were harvested at five ripening stages and treated with 100 nL L-1 of 1-MCP during 12 hours at 23ºC. Fruit skin color and pulp firmness were daily analyzed while soluble solids, titratable acidity and ascorbic acid were evaluated when fruit reached the consumption firmness (20 N). 1-MCP delayed firmness loss during fruit ripening of all ripening stages. The use of 1-MCP prejudices the softening of fruit harvested at stage 0 (totally green), which did not reach the consumption firmness. Although 1-MCP application at early stages was responsible for a significant increment in commercialization period, treated fruit stayed in the consumption condition for few days. When applied to a more advanced stage, 1-MCP not only increased the commercialization period, but also prolonged the period in that fruit stayed in consumption condition. 1-MCP also delayed the color change, but with a lower effect when compared to firmness retention. Ascorbic acid, titratable acidity and soluble solids were not influenced by 1-MCP application. The application of 1-MCP in fruit harvested at more advanced ripening stages could be an interesting practice since it does not prevent the ripening and still could prolong the period in which fruit stay in consumption condition.

A goiaba (Psidium guajava L.) é um fruto tropical que apresenta rápido amadurecimento, o que a torna um produto muito perecível. Temperaturas inapropriadas durante o armazenamento e comercialização podem acelerar a perda da qualidade dos frutos. O objetivo desse trabalho foi avaliar a atividade respiratória (AR), a produção de etileno (PE) e o coeficiente Q10 de goiabas em diferentes temperaturas de armazenamento. Goiabas do cultivar Paluma foram colhidas no estádio 1 de maturação (casca verde escura) e armazenadas a 1, 11, 21, 31 e 41ºC. A AR e a PE foram determinadas com 12, 36, 84 e 156 h de armazenamento. As taxas de AR e PE a 1 e 11ºC foram as menores, atingindo valores ao redor de 0,16 e 0,43 mmol CO2 kg-1 h-1 e 0,003 e 0,019 µmol C2H4 kg-1 h-1, respectivamente. Quando as goiabas foram armazenadas a 21ºC, observou-se aumento gradual em AR e PE, as quais alcançaram valores de 2,24 mmol CO2 kg-1 h-1 e 0,20 µmol C2H4 kg-1 h-1 após 156 h de armazenamento. As maiores AR e PE foram observadas em goiabas armazenadas a 31ºC. Apesar de alta AR, goiabas armazenadas a 41ºC tiveram baixa PE, similarmente àquelas armazenadas a 11ºC, indicando dano por alta temperatura. Na faixa de 1-11ºC, o valor médio de Q10 foi de 3,0, enquanto esse valor quase duplicou na faixa de 11-21ºC, atingindo 5,9. O Q10 decresceu nas faixas de 21-31ºC e 31-41ºC, apresentando valores de 1,5 e 0,8, respectivamente. Conhecendo-se a variação do Q10, da taxa respiratória e do comportamento do amadurecimento em resposta a diferentes temperaturas, as condições de armazenamento e comercialização dos frutos podem ser otimizadas para reduzir as perdas na qualidade.

Guava (Psidium guajava L.) is a tropical fruit that presents fast post-harvest ripening; therefore it is a very perishable product. Inappropriate storage temperature and retail practices can accelerate fruit quality loss. The objective of this study was to evaluate the respiratory activity (RA), the ethylene production (EP) and Q10 of guava fruit at different storage temperatures. 'Paluma' guava fruits were harvested at maturity stage 1 (dark-green skin) and stored at either 1, 11, 21, 31 or 41ºC; RA and EP were determined after 12, 36, 84 and 156 h of storage. RA and EP rates at 1 and 11ºC were the lowest - 0.16 and 0.43 mmol CO2 kg-1 h-1 and 0.003 and 0.019 µmol C2H4 kg-1 h-1, respectively. When guavas were stored at 21ºC, a gradual increase occurred in RA and EP, reaching 2.24 mmol CO2 kg-1 h-1 and 0.20 µmol C2H4 kg-1 h-1, after 156 h of storage. The highest RA and EP were recorded for guavas stored at 31ºC. In spite of high RA, guavas stored at 41ºC presented EP similar to guavas stored at 11ºC, an indicator of heat-stress injury. Considering the 1-11ºC range, the mean Q10 value was around 3.0; the Q10 value almost duplicated at 11-21ºC range (5.9). At 21-31ºC and 31-41ºC, Q10 was 1.5 and 0.8, respectively. Knowing Q10, respiratory variation and ripening behavior in response to different temperatures, fruit storage and retail conditions can be optimized to reduce quality losses.

A goiaba (Psidium guajava L.) é um fruto tropical que apresenta rápido amadurecimento após a colheita. Entretanto, as bases fisiológicas envolvidas no seu processo de amadurecimento ainda não estão totalmente claras, o que torna difícil o desenvolvimento de técnicas que prolonguem o armazenamento. Realizaram-se dois experimentos com o objetivo de determinar o comportamento do amadurecimento de goiabas 'Pedro Sato'. No primeiro, goiabas em três estádios de maturação (I - verde-escuro, II - verde-claro e III - verde-amarelado) foram armazenadas à temperatura ambiente (23 ± 1°C e 85 ± 5 % UR), avaliando-se taxa respiratória, a produção de etileno, a cor da casca e da polpa e a firmeza. No segundo experimento, aplicaram-se etileno e 1-metilciclopropeno (1-MCP) nas goiabas no estádio verde-claro e estudou-se o comportamento do amadurecimento durante armazenamento à temperatura ambiente. Frutos de todos os estádios de maturação mostraram aumento gradual na taxa respiratória e produção do etileno. As mudanças intensas na cor da casca e da polpa e da firmeza precederam a máxima taxa respiratória e produção de etileno. 1-MCP retardou o amadurecimento, enquanto a aplicação de etileno não promoveu esse processo. Tais resultados não permitem a classificação da goiaba 'Pedro Sato' como um tradicional fruto climatérico.

Guava (Psidium guajava L.) is a tropical fruit exhibiting rapid post-harvest ripening. However, the physiological basis involved in the ripening process of guava is not totally clear, which makes it difficult to develop technologies to enhance fruit storability. Two experiments were carried out with the objective of determining the ripening behavior of 'Pedro Sato' guavas. In the first experiment, guava fruits at three maturity stages (I - dark green, II - light green and III - yellow-green) were stored at room temperature (23 ± 1°C and 85 ± 5 % RH). The respiratory rate, ethylene production, pulp and skin colours, and firmness were evaluated. In the second experiment, ethylene and 1-methylcyclopropene (1-MCP) were applied to guavas at the light green maturity stage and the ripening behaviour during storage at room temperature was studied. Fruits from all maturity stages showed a gradual increase in the respiratory rate and ethylene production. The intense changes in pulp and skin colours and in firmness preceded the maximum respiratory rate and ethylene production. 1-MCP reduced the rate of ripening, while the application of ethylene did not promote this process. These results do not permit the classification of 'Pedro Sato' guava as a traditional climacteric fruit.

O objetivo deste trabalho foi determinar índices de maturação adequados para avaliar a influência dos estádios de maturação nas transformações físico-químicas após a colheita de goiabas (Psidium guajava cv. Pedro Sato). Frutos colhidos nos estádios de maturação, segundo a cor da casca (1: verde-escura, 2: verde-clara e 3: verde-amarela), foram armazenados a 25±1ºC e 80±5% UR e avaliados quanto às transformações físicas e químicas e percentual de podridão. No momento da colheita, a cor da casca, a firmeza da polpa e a relação sólidos solúveis totais/acidez total titulável apresentaram diferenças significativas entre os três estádios de maturação. Durante o amadurecimento, as transformações físico-químicas foram semelhantes entre os estádios de maturação. O período máximo de viabilidade do fruto para comercialização foi de dois, quatro e seis dias após a colheita, nos estádios 3, 2 e 1, respectivamente. Os teores de sólidos solúveis totais, acidez total titulável e ácido ascórbico apresentaram baixo coeficiente de correlação com as variáveis estudadas. A cor da casca, a firmeza da polpa e a relação sólidos solúveis totais/acidez total titulável foram considerados índices de maturação adequados para a goiaba 'Pedro Sato'.

The aim of this work was to determine the maturation indices to evaluate the influence of maturation stages on physical and chemical transformations in guavas (Psidium guajava cv. Pedro Sato) after harvest. Guavas were harvested at maturation stages, according to the skin color, 1 (dark green), 2 (light green) and stage 3 (yellowish green), stored at 25+1ºC and 85+5% RH, and assessed for physical and chemical transformations and decay. At harvest, the three maturation stages presented distinct results of skin color, pulp firmness and total soluble solids total titratable acidity ratio. During the ripening, physical and chemical transformations were similar among the maturation stages. The postharvest life of stages 3, 2 and 1, was two, four and six days, respectively. The total soluble solids content, total titratable acidity and ascorbic acid presented low correlated coefficient with all variables studied. The skin color, the pulp firmness and the total soluble solids/total titratable acidity ratio can be considered acceptable maturation indexes for guava 'Pedro Sato'.

O presente trabalho objetivou avaliar as características anatômicas e físico-químicas de pêssegos (Prunus persica (L.) Batsch) 'Aurora-1' e 'Dourado-2', armazenados em diferentes temperaturas e períodos. No primeiro experimento, os frutos foram armazenados a 0, 3 e 6ºC por 14, 21, 28 e 35 dias (mais dois dias de simulação à comercialização, sob 25ºC). No segundo experimento, os frutos foram armazenados a 0 e 3ºC por 7, 14, 21, 28 e 35 dias (mais dois dias de simulação à comercialização, sob 25ºC). O delineamento experimental empregado foi inteiramente ao acaso, em esquema fatorial, com quatro repetições em parcelas de seis frutos. Pêssegos 'Dourado-2', após sete dias de armazenamento a 3ºC ou 14 dias de armazenamento a 0ºC, apresentaram lanosidade caracterizada pela queda brusca na firmeza e pouca sucosidade. Os sintomas no mesocarpo foram caracterizados pelo afastamento das paredes de células adjacentes e acúmulo de substâncias pécticas no interior das células e dos espaços intercelulares. Pêssegos 'Aurora-1' sofreram redução na firmeza sem comprometer a qualidade dos frutos, podendo ser conservados por até 35 dias a 0 e 3ºC; mesmo aos 35 dias de armazenamento, o mesocarpo não apresentou alterações típicas da lanosidade. Aos 35 dias de armazenamento a 6ºC, os frutos de ambas cultivares estavam sobremaduros.

The objective of the present study was to evaluate the anatomical and physico-chemical characteristics of 'Aurora-1' and 'Dourado-2' peaches (Prunus persica (L.) Batsch) stored at different temperatures and periods. In the first experiment, fruits were stored at 0, 3 and 6ºC for 14, 21, 28 and 35 days (more two days of simulated commercialization period at 25ºC). In the second experiment, fruits were stored at 0 and 3ºC for 7, 14, 21, 28 and 35 days (more two days at 25ºC of simulated commercialization period). The experiment was a factorial with a completely randomized design with four replicates with six fruit parcels. 'Dourado-2' peaches after seven days of storage at 3ºC or 14 days of storage at 0ºC showed woolliness characterized by a sharp decrease in firmness and low juice content. The mesocarp symptoms were characterized by a separation of cell walls, pectin accumulation into the cells and intercellular spaces. 'Aurora-1' peaches lost firmness without compromising fruit quality; they could be conserved for up to 35 days at 0 or 3ºC; even at 35 days of storage, mesocarp did not present typical alterations of woolliness. At 35 days of storage at 6ºC, the fruits of both cultivars were overripe.
